How a Starbucks Latte Is Made
The espresso count is fixed by size: one shot in a Short or Tall, two in a Grande or Venti. Milk fills the rest of the cup, steamed to about 160 degrees, with roughly a quarter inch of foam on top. Flavored lattes get syrup pumped into the cup before the milk: 3 pumps in a Tall, 4 in a Grande, 5 in a Venti, at about 20 calories and 5 g of sugar each.
Two espresso roasts are in play. The signature Espresso Roast is dark and caramelly and goes into the Caffè Latte, the Pumpkin Spice Latte and the Cinnamon Dolce Latte. Blonde Espresso is lighter and slightly higher in caffeine, which is why the Starbucks Blonde Vanilla Latte and Pecan Crunch Latte show 170 mg against 150 mg for the standard drinks. Protein lattes use a protein-boosted milk instead of syrup alone, which is where their 27 g of protein comes from.
Seasonal and Nutty Lattes
The remaining lattes are variations on the drinks above. The Pecan Crunch Latte and Pistachio Latte are fall and winter seasonals with a brown-butter topping; the Toasted Coconut Latte is a summer syrup drink; and the two caramel protein lattes mirror the vanilla pair with caramel syrup. Latte vs Cappuccino vs Flat White
Three milk drinks, three textures. A Grande Caffè Latte is 190 calories with mostly steamed milk and a thin foam layer. A Grande Cappuccino uses the same shots but replaces half the milk with thick foam, so it is lighter at 140 calories and tastes stronger of coffee. A Flat White uses ristretto shots and whole milk with almost no foam, and a Tall is 170 calories.
Choose the latte if you want a milky, mild cup or a flavor. Choose the cappuccino if you want the coffee to come through and fewer calories. Choose the flat white if you want a richer, smaller, more espresso-forward drink. None of the three has syrup by default.
Starbucks Latte Calories by Size
Milk is the calorie driver, so every size step adds roughly 50 to 80 calories on a flavored latte and less on the plain one. The whipped-cream drinks jump more between sizes because the whip portion grows too.

Allergen Note for Starbucks Lattes
All 12 lattes contain milk as served. The pumpkin spice sauce and the protein milk base both contain dairy on their own, so a nondairy milk swap does not make those drinks dairy-free. Syrups are generally free of the major allergens, but the pecan and pistachio drinks use flavorings and toppings that share equipment with tree nut ingredients; ask the barista if that matters to you.
